Yield: 5 gallons

Amount Ingredients
4 gal. Water
1 lb. Custom Culinary® Gold Label Turkey Base
5 lbs. Turkey, Diced 1/2"
5 lbs. Shiitake Mushrooms, Sliced
6 lbs. Tofu, Diced
4 bunches Scallions, Diced
8 oz. Ginger, Minced
1-1/2 cups Cilantro, Chopped
1-1/2 cups Tamari or Soy Sauce
2 tsp. Black Pepper
1/4 cup Lime Juice
PREPARATION

  1. In an 8 gallon sauce pot or 10 gallon steam jacketed kettle add water and Custom Culinary® Gold Label Turkey Base, mixing well. Heat to a gentle boil.
  2. Add turkey. Heat to boil. Reduce heat and gently boil 15-20 minutes until turkey meat is tender, stirring occasionally.
  3. Add mushrooms, tofu, scallions, ginger, cilantro, tamari or soy sauce, black pepper and lime juice, mixing well. Heat to boiling. Reduce heat and gently boil 5-7 minutes, stirring frequently.
