Two-Cheese Vegetable Soup

Amount Ingredients
2 lbs. Onion, Finely Chopped
8 oz. Butter
4 gal. Water, Hot
2 (24-oz.) bags Custom Culinary® Master's Touch® Instant Cheddar Cheese Sauce Mix
1 (20-oz.) bag Custom Culinary® Whisk & Serve® Instant Cream Soup & Sauce Starter
1-1/2 lbs. Parmesan Cheese, Grated
6 lbs. Frozen Vegetable Blend, Thawed (Broccoli, Cauliflower, Carrots)
1/2 tsp. Cayenne Pepper
PREPARATION

  1. Sauté onions in butter, set aside.
  2. Using 2 gallons of water, prepare 2 bags of Master's Touch® Instant Cheddar Cheese Sauce Mix according to package directions. Stir in additional 2 gallons hot water.
  3. Using a wire whip gradually pour 2 bags of Whisk & Serve® Instant Cream Soup & Sauce Starter into cheese sauce mix. Heat 5 minutes, whip occasionally.
  4. Add parmesan cheese to cheese soup until melted. Stir in thawed vegetable blend and onions. Add cayenne pepper. Simmer 3 to 4 minutes.
