Beef Sirloin with Pasta and Asparagus

Familiar ingredients brought together in an innovative format for a twist on a classic dish. Featuring Custom Culinary® Gold Label Savory Roasted Beef Base and Custom Culinary® PanRoast® Brown Gravy Mix, Beef Sirloin with Pasta and Asparagus combines pasta with a beef sirloin, asparagus, and green onions.

3 lb. Beef Top Sirloin, Trimmed, 1". Diced
4 oz. Vegetable Oil
1-1/2 Tbsp. Black Pepper
1-1/2 qt. Custom Culinary® Gold Label Savory Roasted Beef Base, Prepared
12 Tarragon Sprigs
2-1/4 lbs. Capellini Pasta
2 gal. Boiling Water
12 oz. Asparagus Tips, Blanched
2 cups Green Onions, Sliced
1 lb. Custom Culinary® PanRoast® Brown Gravy Mix, Prepared
PREPARATION

  1. In a 2-gallon sauce pot prepare PanRoast® Brown Gravy following package instructions. Set aside. Keep hot.
  2. In a 4-gallon sauce pot heat water to boiling. Add Gold Label Savory Roasted Beef Base, mixing well. Heat to boiling. Gradually add pasta, stirring constantly. Cook pasta approximately 12-15 minutes until al dente. Drain. Reserve 1/2 the liquid.  
  3. In a large braising pan, heat oil over medium high heat. Sauté beef until evenly browned. Add reserved beef broth from cooking pasta to half cover meat. Add pepper, and tarragon spices. Gently boil for approximately 20 minutes.
  4. For each serving, heat 1/2 cup of beef with braising liquid to moisten meat. Add 5 asparagus tips, 1/4 cups green onions and pasta. Heat over medium heat until hot. Plate the pasta and beef mixture, ladle on 2oz. of prepared brown gravy.
