Tacos Are On Our Mind

We’re always on the hunt for a flawless taco. You know, with the perfect combination of acidity, crunchiness, and spice. They make the best weeknight meal, are always open to interpretation, and can never really be wrong. We had something close to perfect the other day at Del Seoul in Chicago, where the flavors of Korean fused with Mexican staples brought the mash-up to life. Go with the shrimp taco knowing it will be packed with bursts of brightness alongside the spice of the sesame-chili aioli and the crunch of the slaw. There was more on the menu, too – blackened tofu, sambal fish, kalbi, and banh mi sandwiches along with other shareables.

The plan for today is to try another and see if we can beat it. Mi Tocaya Antojería is on the list where we’ll have a hard time choosing between the taco options. We’d probably pick the Milpa first for the summer squash and corn crema but wouldn’t be able to leave without giving the smoked beer can chicken and cochinita option a try. And then we’ll make some cochinita of our own and top with our Jalapeno Relish Infused Coleslaw.

After the braised pork has been loaded onto tortillas and shared among the team, we’ll roll up our sleeves and keep the taco streak alive. We’ll start with the street food favorite Fish Taco which we’ll be sure to load up with a vibrant Chimichurri Sauce. It’s a beautiful combination, really, with bright colors and even brighter flavors.

Chipotle Shrimp Tacos are always a hit and this one, complete with a Chipotle Pepper Jelly Glaze and garnished with pickled onion, is worth every bite. Of course, if you’re not in the mood for shrimp, you can quickly substitute with tofu or another grilled protein. Even better, load with summer vegetables and have a meatless meal that leads with flavor and checks all the taco must-have boxes.

Before the weekend arrives, we’ll braise a brisket in our own Mole Negro Sauce, prepare the toppings, and close out the week fwith Braised Brisket Tacos. If you find yourself with spare time this week, make these for yourself. Add a pitcher of margaritas to finish the meal. Keep it simple or add some spice to the rim and kick it up a notch. It’s up to you.
